This is not my cake, but it comes out almost the same. This cake is cool for the summer when its hot and fruits are the next best thing. Pineapple in Zambia are so cheap at the moment and Cherries are constantly available in all supermarkets, the other ingredients are so affordable that you will not regret trying out this recipe even in the winter. It works better for dessert than for tea time because of the extra sugar and Butter.
The only downside is that you have have to eat it quick this season because fresh fruit tends to go bad easily.
Ingredients:
2 cups Cake flour
1 and a quater Sugar
270g Butter
4 eggs (large)
1 cup fresh cream
1 fresh milk
1 cup freshly grated Coconut/dried dissaceted
2 tsp baking powder
9 Pineapple rings and 9 halved cherries
method: beat 250g and 260g sugar until pale then add eggs one at a time and add sifted flour with baking powder the add coconut, milk, fresh cream and vanilla extract if prefered.
In a Baking tray, break pieces of butter and line pineapples and cherries in the middle with sprinkled sugar at the bottom and pour cake mixture and bake at 180'c for 50-60mins.,
Turn over and enjoy
